UCCC’s Nutrition Program provides our children with a healthy breakfast, lunch, and mid-afternoon snack. We have developed a menu of fresh and fresh frozen food items to replace processed and packaged food. UCCC follows the Child and Adult Care Food Program (CACFP) guidelines in the preparation of meals. Our meals, provided in conjunction with these guidelines, support brain growth, energy, and exposure to a wide variety of flavors. In addition, we utilize vegetables and herbs from the UCCC garden when available. UCCC meets the Missouri Eat Smart guidelines which include more healthy grains, fruits, and vegetables and fewer processed foods for our children. Menus are posted outside the classrooms and on our website bi-weekly.

Meals are prepared on-site by our professional kitchen staff beginning at 6:30 a.m. Our professional staff accommodates a wide range of special dietary needs among UCCC children, and parents are asked to inform their child’s teacher of any special needs or changes in dietary needs so that Ms. Desiree and her staff can accommodate immediately. UCCC is an accredited facility through the Missouri Department of Health Services and maintains an "A" rating.
Chef Demond joined the UCCC family with a talent for making food FUN for our children and staff. He incorporates fresh ingredients in creative snacks and meals, introducing our children to new flavors, colors, and texture. The adventures around food and mealtimes at UCCC support our children’s development of self-regulation, autonomy, and early literacy and language.
Ms. Desiree has over 35 years in the food management profession and is a certified professional food handler through the American National Standard Institute and the Conference for Food Protection. She has been with UCCC for 10 years!
